La coltivazione dell’olivo alla Tenuta Castelnuovo Tancredi ha una storia secolare, testimoniata da numerose opere d’arte del tardo Medioevo che raffigurano la presenza e la cura di queste piante nel territorio. Argante è il nostro olio extra vergine d’oliva biologico certificato, prodotto con rispetto per la tradizione e il territorio.

Le nostre olive sono coltivate esclusivamente con metodi biologici certificati, raccolte a mano e frante a freddo entro 24 ore dalla raccolta per garantire la massima freschezza e autenticità del sapore. La varietà principale è il Frantoio, con l’impollinazione supportata da tre cultivar toscane tipiche: Moraiolo, Leccino e Maurino.

Argante ha un colore verde intenso con riflessi dorati, un aroma fruttato e un profilo aromatico che bilancia note di amaro e piccante. Con un’acidità tipicamente inferiore allo 0,5%, è ideale per esaltare qualsiasi piatto con un tocco morbido e raffinato.

Vin Santo is a tradition at our Estate. Trebbiano Toscano and Malvasia grapes are carefully placed on straw mats in a highly ventilated room until the noble mold begins to form on the skins, which occurs usually after 3 months. Following a very delicate pressing, the juice is placed in Petites barriques that vary in size from 50 to 125 liters, for approximately 36 months. A 1-year bottle refinement is normal practice prior to release. “San Bartolomeo” has a splendid amber hue and evokes intense notes of dried plums, apricots, dates, toasted almonds, and honey. It finishes off with a persistently sinuous and honey-sweet palate.

Grape varietal: Malvasia and Trebbiano Toscano

Vinification process: The Trebbiano Toscano and Malvasia grapes are carefully handpicked and placed on straw mats in a well-ventilated room and left for approximately three to four months while the noble mold begins to form on the skins of the grapes. After a delicate pressing, the juice obtained in placed in petite “barriques” or “carati” that vary in size from 50 to 125 liters, for approximately 36 to 48 months. A minimum 6 month bottle refinement is normal procedure prior to releasing Bartolomeo.

Serving temperature: Slightly chilled prior before serving

Suggest food accompaniments: The perfect acccompaniment to aged pecorino cheeses as well as with stilton and gorgonzola. Always great with the classic “tozzetti” for dunking or with a dry fruit cake like the “crostata”. Of course you can enjoy it simply on its own.

Organoleptic notes: It has a splendid amber hue and evokes intense notes of dried plums, apricots, dates, and toasted almonds. Finishing off with a persistently sinuous and honey sweet palate that goes on and on.
